Summary:
The OW Oven Operator is responsible for effectively performing all the required duties of the position in an accurate, thorough, and safe manner.
Employees are responsible for producing a safe and quality food product per USDA guidelines and are required to report all food safety related problems to their Supervisor/Manager and/or to the Quality Assurance department to initiate immediate action.

OLD WISCONSIN (SAUSAGE) MAJOR DUTIES &
Responsibilities:
Follow the HACCP program including developing a working knowledge of the Critical Control Points and Critical Limits as they pertain to the food safety of our product.
Starts, stops, and regulates temperature of ovens.
Push/pull racks in and out of the smokehouses, review processing schedules, operate smoke generators.
Cleans related equipment, including ovens Inspects cooked product for obvious deficiencies during cooking process Measures or weighs racks of product during and/or after cook cycles.
Takes responsibility of the work area to produce a safe and quality food product.
Reports all food safety related problems to your supervisor, manager, or to the quality assurance department to initiate immediate action.
Comply with safety regulations and maintain clean and orderly work areas.
Other duties as assigned.
